Ingredients

  • 1 onion diced
  • 1 Kg mushrooms
  • 1 aubergine diced
  • 2 tins Sova chopped tomatoes
  • 2 cloves crushed garlic
  • salt and pepper
  • 1 box Sova Precooked Lasagne
  • 200g cottage cheese
  • 2 cups Sova Passata
  • 1/2 tsp garlic powder
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • grated cheese

Directions

  • Saute veg in oil until soft, add 2 tins chopped tomatoes, salt and pepper.
  • In a baking dish, layer vegetable mixture, lasagna sheets, and cottage cheese. Repeat layers and top with lasagna sheets.
  • Mix passata with garlic powder, basil, and oregano; pour over lasagna. Sprinkle with grated cheese.
  • Bake covered at 180°C for 40 minutes. Uncover and bake for an additional 15 minutes until golden.
